It’s summer, and noting says summer like a juicy cheeseburger fresh off the grill.  This combines the tastes of a classic bacon cheeseburger with a frittata.  The results are amazing.

Bacon Cheese Burger Frittata

When you can't get to a grill, but want a burger, try this!

Ingredients

  • 1 lbs ground beef
  • 6-8 eggs lightly beaten
  • 4-6 slices bacon
  • 1 red onion diced
  • 12 cherry tomatoes halved or quartered
  • 1 tsp beef seasoning*
  • 1 cup shredded cheddar cheese optional

Instructions

  • Preheat oven to to 375. Heat a cast iron or oven safe skillet over medium high heat.
  • When skillet is hot, add bacon. Cook bacon until crisp, remove and set aside to cool.  Drain bacon fat from pan.
  • Add ground beef and seasoning to skillet and brown. When meat is about half way done, add red onion.  Continue to stir until meat is cooked.
  • While meat is cooking, whisk eggs in large bowl. Crumble the cooled bacon.
  • When meat is browned, drain some fat if desired. Sprinkle bacon over meat and onions.  Pour eggs over pan.  Top with chopped tomatoes and cheese.
  • Place in oven. Cook until eggs set and cheese is melted, about 20 -25 minutes.
  • Serve hot.

*Don’t have a favorite beef seasoning? Use 1/3 tsp each of salt, pepper, and garlic powder

Nothing tops a freshly grilled burger in the summertime. Unfortunately, it’s not always summer, and sometimes summer gets to hot to grill, and sometimes summer rains. So what do you do when you want that burger but can’t grill? Try this Bacon Cheeseburger Frittata!

So let’s get started. We are going to need both the oven and stove top, so start by preheating the oven to 375, and heating your oil in an oven safe skillet over medium high heat.

When skillet is hot, add bacon.  Cook the bacon until crisp, flipping several times while cooking. Once done, remove and set aside to cool.  You might need to cook the bacon in shifts, depending on how large your pan is.  Drain most of the bacon grease from pan, but leave a little to the skillet coat if you want.

Add ground beef and seasoning to skillet. Cook the meat until browned, stirring occasionally and breaking up any large pieces of ground beef.   When the beef is about half way done, add red onion.  Continue to stir the beef and onions occasionally until meat is cooked.

Meanwhile, as the beef and onions are cooking, whisk the eggs in a large bowl. Once the bacon has cooled and can be handled, break it into crumbles. When beef is done cooking, drain off any fat in the pan. Spread the meat and onions evenly in the pan and sprinkle the bacon on top.

Pour eggs over the meats and onions in the pan.  Turn the pan slightly if necessary or gently adjust the filling so that the eggs is able to complete cover the burger mix. Top the frittata with chopped tomatoes and cheese.  Place the skillet in the oven and cook until the eggs set and cheese is melted, about 20 -25 minutes.

Once the eggs are set, remove the frittata from oven. Allow to sit for a few minutes, but serve hot! Got leftovers? The frittata cools and reheats well. And since it’s an egg dish, I do’t mind it for breakfast the next day.
