Avocado and Tomato Salad

A quick and easy side I love to pair with tacos or fajitas.  This salad makes wonderful use of all those fresh vegetables that are coming into season – tomatoes and onions!

  • 2 large avocados, peeled, pitted and diced
  • 1 sweet onion, chopped
  • 1 green bell pepper, chopped
  • ½ pint cherry tomatoes, quartered
  • 1/4 cup chopped fresh cilantro
  • 1/2 lime, juiced
  • salt and pepper to taste


In a medium bowl, combine avocados, onion, bell pepper, tomato, cilantro and lime juice. Gently toss until evenly coated. Season with salt and pepper.

This has got the be the easiest side dish not involving a microwave ever.  To be honest, it's probably easier that most involving a microwave anyway.

Chopped Tomatoes for Avocado Salad

Just start by chopping everything up.  Ok, so there's avocados involved, and sometimes those are a little tricky to peel, but it doesn't need to look pretty for this salad!

Then just combine everything and mix well to coat your tomatoes, avocado, and onion in the lime juice.
