Ingredients

  • 12 oz sweet potatoes peeled and cubed
  • 12 oz green beans trimmed
  • 1 red onion sliced
  • 1 tbsp oil
  • 2 tsp thyme
  • 5 chicken thighs bone-in/skin-on
  • 1/4 – 1/2 cup ranch dressing
  • salt and pepper to taste
  • 4 slices bacon

Instructions

  • Preheat oven to 425 degrees. Prepare a sheet pan with cooking spray.
  • Add the sweet potatoes, green beans, red onion, bacon, and fresh thyme to the sheet pan. Drizzle with oil and toss to coat.
  • With a paper towel, soak up as much liquid as you can from the chicken thighs. Spread out veggies to make a space for each chicken thigh. Place on pan. Brush with a little oil.
  • Sprinkle salt and pepper over vegetables and meat.
  • Bake for 30 minutes or until chicken is cooked through. Toss veggies a couple of times during baking time.
  • Remove pan from oven. Place one chicken thigh and vegetable on plate.  Drizzle with ranch dressing and serve.

Add the sweet potatoes, green beans, red onion, bacon, and fresh thyme to the sheet pan. Drizzle with oil and toss to coat.  You won’t need much oil, since the bacon will provide some of the fat

Spread out veggies to make a space for each chicken thigh. Place meat on pan and brush with oil. Sprinkle salt and pepper over vegetables and meat.

Remove pan from oven.  Place one chicken thigh and vegetable on plate.  Drizzle with ranch dressing and serve.
