Red peppers. One of the food missing from my childhood. Even now as an adult, when ever I think peppers I tend to gravitate towards green peppers. But here in our Red Pepper Chicken recipe, red gets all the glory!

Ingredients

  • 2 lbs. chicken breast
  • 2 Red Bell Peppers sliced and deseeded
  • 1/4 cup olive oil
  • 4 garlic cloves
  • 1 onion diced and sliced
  • 1 tsp crushed red pepper flakes
  • 1/2 tsp pepper
  • 1/4 tsp salt

Instructions

  • Combine oil, garlic, red pepper flakes, pepper, and salt in small bowl.
  • Add chicken, peppers, and onion to crock pot. Pour oil mixture over chicken and vegetables.
  • Cook on low for 6 hours.
  • Shortly before serving, remove chicken from crock pot. Shred and return to crock pot.  Stir chicken, vegetables, and juices.

What do I love about this recipe? Well, for one, it lets red pepper step up and be the star of a dish. What else do I love? It’s so easy! Just peppers, chicken, onion, and some great spices and oil. I know, it’s not the prettiest dish when it’s done, but it tastes delious!

Oil and Seasoning for Red Pepper Chicken

I start by combining my seasonings and the oil. Here’s a little cleaning tip – if you have a mix like this, with a small amount of liquids and seasoning, don’t mix it in a bowl. Measure out your liquid ingredients in a liquid measuring up. Then, instead of transferring the liquid to a bowl, just use the measuring up as the bowl by adding in the spices and seasoning.

Chicken, Peppers, and Onion in Crock Pot

Take your chopped peppers, onions, and chicken and place everything in the crock pot.

Next, pour the oil mixture over chicken and vegetables. Give it a few quick stirs to coat if desired. Then set he crock pot to cook on low for six hours.

Shortly before serving, remove chicken from crock pot.  Shred and return to crock pot.  Stir chicken, vegetables, and juices.

Bonus!  This recipe freezes really well.  Just combine all ingredients in a Ziplock freezer bag, and freeze flat.  Move bag to freezer the night before cooking to thaw.  Dump bag into crock pot and cook!

    Had for dinner yesterday, the smells coming from the slow cooker all day were so good! Was lovely, I didn’t add the chilli flakes until after it was ready as my children are not fans of chilli flakes, my partner and I added them on top after!
