Bruschetta Chicken Bake

From the back of a box of Stove Top Stuffing comes Bruschetta Chicken Bake. It's pretty good, but that didn't stop me from stepping it up a little!

Ingredients

  • 1 can diced tomatoes
  • 1 box Stove Top Stuffing, chicken flavor
  • 1/2 cup chicken broth
  • 2 garlic cloves
  • 1 tsp basil
  • 1 cup shredded mozzarella cheese
  • 1.5 lbs. chicken breast cut into bite size pieces
  • 1 tsp Italian or poultry seasoning

Instructions

  • Preheat oven to 400 degrees. Prepare a casserole dish with cooking spray.
  • In a bowl, combine tomatoes, stuffing mix, broth, and garlic.
  • Season chicken with Italian or poultry seasoning.
  • Place chicken in the prepared casserole dish. Top with cheese and basil.
  • Top chicken and cheese with stuffing mix. Make sure stuffing mix is evenly distributed over chicken.
  • Bake for 30 minutes, or until chicken is done.

There are a bunch of boxes of stove top in my pantry. I don’t know why I bought Stove Top. I rarely use it, unless for some reason I’m really wanting to make my Mom’s stuffed pork chops. Really, I do stuffing twice a year – Thanksgiving and Christmas, and for those big holidays, there’s no phoning it in. I do stuffing from scratch. But there are several boxes of stove top in my pantry right now. It was probably on sale at the Warehouse Club.

The back of the box has two recipes: one for a meatloaf and one for a chicken bruschetta break. I haven’t looked at the meatloaf recipe yet, but I might have to give it a try after this doing the chicken bruschetta bake, which is a pretty good, and incredibly easy meal.

Now only is it good, but there’s not a lot of extras I added to dress it up. So let’s get started!  Preheat your oven to 400. Get a casserole dish and give it a quick spray with cooking spray.

We’ll start by preparing the stuffing mix. In a large bowl, combine the stuffing mix, tomatoes, garlic, and broth. This is one of the changes I’ve made. I don’t know why any recipe like this would include water! Yes, you need to moisten the stuffing, but why use water when you can use broth. It’s a simple change that will bump up the flavor. Plus, broth is easy to find and generally inexpensive.

But I’ll get off my soapbox now. And of course, don’t worry, if you happen to be out of broth, you can use water. It will be just fine.

Mmmm . . Cheese!

Let the stuffing mix sit while taking care of the chicken. If you haven’t already, cut it into small, bite-sized pieces. The original recipe didn’t call for doing anything with the chicken, but I always season it. I’ve tried this with both a poultry seasoning mix and an Italian mix. Either works well. You can also just use a little salt and pepper, or your choice of herb combination. Sprinkle on the seasoning and place the chicken in the casserole dish.

Next, top the chicken with the shredded mozzarella cheese and basil. Finally, add on the stuffing mix. Make sure everything is evenly distributed in the dish as you add it so the dish cooks evenly.

Bruschetta Chicken Bake

Place in the oven and cook until the chicken is done, about 30 minutes. Remove from oven and serve hot.
