I like zucchini boats. I like Greek food. Now I’ve combined the two. While nothing tops a great gyro, these boats are a low carb tribute to Greece’s famous street food. Enjoy our Greek Zucchini Boats!
Greek Zucchini Boats
Ingredients
- 4 zucchini
- 1 red onion chopped
- 1 lbs. ground meat, beef or lamb
- 1/2 cup diced tomatoes
- 1/2 cup Kalamata olives sliced
- 1/2 cup Feta optional
- Tzatziki sauce optional
Instructions
- Preheat oven to 350 degrees. Spray baking dish with cooking spray or coat lightly with oil
- Make the zucchini boats. Cut ends off the zucchini and cut in half lengthwise. Using a spoon, hollow out the center of the zucchini halves, leaving about 1/4-1/2 inch shell. Place flesh side up in glass baking dish.
- Prepare a sauté pan with cooking spray and heat to medium.
- Add in onion and ground meat. Cook until browned, 4-5 minutes.
- Add diced tomatoes, olives, and oregano, stir to combine.
- Stuff the zucchini boats with the meat mixture. Cover pan with foil and bake for 25 minutes. Remove from oven, uncover and add feta. Return to oven for 5 minutes.
- Remove from oven, plate, and serve with side of Tzatziki sauce.

Oh how I love zucchini boats. There’s nothing better than walking up to a farmer’s market in the summer and seeing the giant, fresh zucchini sitting there. It’s like it’s yelling at me to take it home and fill it with yummy stuffing. Today I went with a Greek inspired stuffing. I’m cooking with beef, but if you wanted a more authentic taste, feel free to go with lamb instead.
This recipe starts out as all boats do. preheat oven to 350 degrees. Spray baking dish with cooking spray or coat lightly with oil. While oven warms, make the zucchini boats. Cut ends off the zucchini and cut in half lengthwise. Using a spoon or similar tool (I use an ice cream scoop), hollow out the center of the zucchini halves, leaving about 1/4-1/2 inch shell. Place flesh side up in glass baking dish.
Spray a sauce pan with cooking spray, or use a non-stick pan, and heat it to medium. Once the pan is hot, brown the meat and onion. This should take about 4 to 5 minutes. If you’re using a fatty ground meat, drain some of the fat off. I usually cook with 90% lean ground beef, so there is some fat to drain off. Once the meat is cooked through, remove it from the heat. Add diced tomatoes, olives, and oregano to the meat mixture and stir to combine.
Stuff the zucchini boats with the meat mixture. Cover pan with foil and place in oven. If you’re going to add some feta, bake for 25 minutes, then remove the boats from the oven, uncover and add feta. Return to oven for 5 minutes. Not using the feta? Just keep the boats in the oven for 30 minutes.Remove from oven, plate, and serve with side of Tzatziki sauce.
